Your business should be dedicated to delivering high-quality service and products.
I once met a young guy many many years ago who said something to the effect of "if a client can't afford me at X, I shoot on this really low end camera. If the client pays more, I might consider using my best camera." Obviously, this young guy saying this, didn't sit well with me. I also did not work with him again after the project I was wrapping up at the time. It showed his true character.
If you offer subpar service to make greater gains, it'll eventually expose you. You may not lose your business, but people do talk. Especially online.
In the example I provided about the young guy who said what he said, shows pride, ego and a lack of care for his customer. Never have I utilized lesser quality equipment to do a client job if the job was lower budget. Add or subtracting necessary contracted team members for project makes sense. Dulling down equipment options when it doesn't truly affect a cost, is wrong.
Your business, no matter what you do, offer or how you serve should be excellent. And if the product or service falls short, you need to make it right. How you handle your business reflects on you and your reputation.
